This Gluten Free Grain Fee Potato Nachos is a fantastic example of a healthy and quick lunch or dinner or side dish. It’s a great way to sneak more vegetables into your diet. You could use a sweet potato instead for extra nutrients and flavour.
- Line a roasting tray with baking paper
- Slice potatoes into 2-3 mm slices and coat with oil, salt, pepper and rosemary (optional).
- Bake at 210 degrees celcius (or hotter – but keep an eye on them!) for 15-20 minutes until golden and crispy on the edges. Turn over and cook for another 10 or so minutes to ensure the slices are crispy!
- Layer potatoes alternatively with salad ingredients and feta/ cheese.
