Are you bored with plain old breakfast cereal for breakfast? This collection has NO cereal boxes in sight. You might look them in horror though and go WHAT? There is no way my family or I would eat that? That’s ok – I felt the same years ago when I read “Changing Habits, Changing Lives” by Cyndi O’Meara. It was chapter one and I thought there is no way I can give up breakfast cereal. I am far better at recognising EVERY meal is a great opportunity to pack in nutrient dense foods – especially breakfast. We have grown up on cereals, but thinking out side the box to get maximum nutrients in is what we really need to be doing.
The research in the area of ADHD / ADD shows that eating a breakfast that contains some protein is helpful for improving concentration.
- In a 1983 study published in the Journal of Psychiatric Research, researchers at George Washington University tested three breakfast types (high-carbohydrate, high-protein, and no breakfast at all) on 39 children with ADHD and 44 kids without the condition.
- For the hyperactive children, performance on several tests, including a test for attention, was significantly worse with the high-carbohydrate breakfast, as compared with the scores of the children who ate the high-protein breakfast.
- These findings support the popular belief that people with ADHD do better on a protein rich breakfast and lunch. A protein-rich breakfast seems to reduce the likelihood that ADHD medication will cause irritability or restlessness.
And honestly it’s not just kids with ADHD who feel better! Avoiding a carb only breakfast has helped me feel better and even my clients whose children do NOT have ADHD/ ADD say they feel better during the day – and they arrive home less feral!! Everyone’s a WINNER!
Avocado, cucumber, tomato and sunflower seeds
This is one of my favourite breakfasts. I love making this when avocados are in season, cheap and flavoursome! Full of good fats and the extra little protein of sunflower seeds. I don’t have exact measures – I just use 1 avocado and probably 5 cherry tomatoes/ 1 whole tomato and 8cm worth of cucumber! I drizzle it with avocado oil, salt and pepper too.
Kale and capsicum
A quick 3 minute panfry and these vegetables are done. I don’t chop the Kale – I just chop the capsicum and while it is cooking I tear in leaves of kale. Once cooked I pop it into a plate, add sunflower seeds. Sometimes I’ll add cubes of cheese when it’s hot so it melts. Tastes delicious!
You could toss in a boiled egg if you like!
Tania Hubbard’s Almond and Chia Seed bread (rolls)
I make the egg-free bread roll option and cook them in a muffin tray for bread rolls. I serve them in a few ways:
- with butter and cheese (more like I have bread with my slabs of butter and cheese!)
- with butter and unhulled tahini (instead of peanut butter)
- with unhulled tahini and banana (and cinnamon and yoghurt sometimes drizzled on top too)

Egg – Omelette
Boiled, poached, scrambled, omelette – you name it I love it.
I loving making a folded omelette – easy and quick. If you need to make enough for a few people make sure you cook the extra vegetables like I did in the photo and you can share the omelette. I used two eggs for this one in the photo, chopped asparagus and used that as the filling and I will often cook kale or mushrooms on the side once I have folded the omelette over.
Egg Muffins
These ones are so clever! Make these up the day before and freeze the rest! Great option to go vego/ nitrate free ham or bacon/ salmon.

Smoothies
My favourite is a Chocolate Monkey – banana, cacao, milk (whatever sort I have in the house) and pea protein (again 100% pea – nothing else. It suits me, it might not suit you!). You can easily try these other ones from Jamie Oliver too:

Coconut flour breakfast cakes
I wanted to share with you the fun that happens when you read a recipe wrong but it turns out great anyhow! I decided to cook the Coconut Flour Sponge Cake from Tania Hubbard’s cook book while visiting friends in NSW.
I made a few changes one intentional – the other accidental! First I wanted to make them as individual cakes and then I accidentally used less coconut flour! Even though they turned out eggy – they were still great – as Coconut Flour Breakfast Cakes!! I kept them in the fridge and the next day they were terrific – turning into a sweet eggy breakfast delight! I served them with fruit, nuts and yoghurt – so delicious!
