I wanted to share a few great ideas that I stumbled across in my hunt of things to make. In this collection of Seven Snack Ideas (plus a bonus one!) that are perfect for taking to school or work as all of the recipes in this collection are NUT FREE – and most are Gluten Free – though there are some that use OATS. Be sure to use UNCONTAMINATED oats if you must avoid gluten!
Raw Date Truffles
{Gluten Free + Grain Free} These Raw Date Truffles look amazing and are school lunchbox friendly as they have no nuts! The main ingredients are pretty much dates, a range of seeds: pumpkin seeds, sunflower seeds, chia seeds, coconut
To be honest I would just use sunflower seeds vs pumpkin seeds because sunflower have such a high protein content. Dates and pumpkin seeds are naturally high in sugar/ carbs so boosting the protein ratio is super easy. Having that extra bit of protein is great for helping to keep blood sugar levels stable and keeping concentration levels on track.
I also love that this recipe mentions packet dates as an option too – which is great because they are a cheaper option.

4-Ingredient Apricot Truffles
If you’re over dates you might like these ones with dried apricots! The main ingredients in this one include dried apricots – be sure to get ones without the preservative 220 (sulphur dioxide), if you use protein powder in them too – be sure to get the one that is 100% whatever type of protein you prefer. DO NOT get ones that have added flavour and gunk! It also has oats in it too, so if you need to avoid gluten – get the UNCONTAMINATED oats.

Magic Bean Cake
{Gluten Free + Grain Free} This recipe can be made as is – it’s amazing. Sarah Wong has created a great recipe and I love it. I’ve made it with four eggs once as that is all I had and it was still a winner!

Lemon and Lime Bars
{Gluten Free + Grain Free} These little Lemon and Lime Bars are SO EASY – toss into a processor and that is it! As long as you can have coconut you’re fine! Be sure to choose preservative, sulphur free coconut.
The main ingredients are: coconut, medjool dates, juice and zest of lemon and lime. Check out the Recipe and Photo here: https://wholefoodsimply.com/lemon-lime-bars/
Chewy Caramel Bars
{Nut free if using Sesame seed paste} These bars have oats – so technically if you need gluten free you need to get UNCONTAMINATED oats – which you can get from specialty stores. This one does have almond butter but can EASILY be converted to nut free – just use sesame seed paste instead! The main ingredients are: rolled oats, medjool dates, almond butter* (use tahini OR sesame seed paste instead to keep it nut free).

Grain-Free Breakfast Bars
{Gluten Free + Grain Free} These bars are another great example of using coconut flour! The main ingredients are: coconut flour, flaxseed meal (ground flax seeds), a little bit of sugar of your choice (2 tablespoons), eggs, milk (of your choice – dairy or nondairy), dried fruit and seeds. The sugar would be optional as there is the natural sugar in the dried fruit.
