Regardless of when you plan, on the first Monday of every month I’ll be sharing what’s in season as well as a few recipes to help get you inspired to add a Meatless Monday into your life every week!
One thing that I always recommend is to have vegetarian meals at least once a week to make sure you’re getting in loads of antioxidants and fibre to keep you regular!

What’s in season
During November (in the southern hemisphere) the focus is on:
Fruit: Bananas, Blueberries, Carambola/starfruit, Cherries, Grapefruit, Honeydew melons, Lychees, Mangoes, Rockmelon/cantaloupe, Watermelon, Oranges, Red papaya, Passionfruit, Pineapple, Strawberries
Vegetables: Artichokes, Asparagus, Chinese greens, Gai lan (Chinese broccoli), Green beans, Cucumber, Chillies, Hass avocados, Lettuce, Spring onions/ green shallots, Peas, Potatoes, Silverbeet, Snow peas, Spinach, Sugar snap peas, Sweet corn, Zucchini

Asparagus Quiche
This is one of my absolute favourite ways to have asparagus – oh and in a simple folded omelette (which I am finally great at making!)

How is this for a quick and easy Meatless Monday Recipe? Uses snow peas and other in season vegies! Use any type of noodles you can have.

Hulk Pancakes
Theses pancakes would be fantastic for dinner. Just add some extra vegetables to your plate or in the sauce with the mushrooms and everyone is happy – pancakes for dinner! HOORAY!!

Fabulous Fresh Salad
How is this for an Easy Peasy Salad? Really it is just so easy – and clever. It kind of is one of those salads that is perfect as our weather heats up. Toss in what you have that is in season and enjoy!
