Meal Planning: What’s for Dinner on Meatless Monday in October

Meatless monday OctoberOne thing that I always recommend is to have vegetarian meals at least once a week to make sure you’re getting in loads of antioxidants and fibre to keep you regular!

Depending on your Meal Planning Personality you’ll plan your meals at different times – either a month or a week in advance or on the day.  (Click to take the Quiz to Uncover your Meal Planning Personality).

Regardless of when you plan, on the first Monday of every month I’ll be sharing what’s in season as well as a few recipes to help get you inspired to add a Meatless Monday into your life every week!

 

What’s in season 

During October (in the southern hemisphere) the focus is on:

Fruit:  Bananas, Blueberries, Carambola/starfruit, Grapefruit, Lemons, Mangoes, Oranges, Passionfruit, Pineapple, Red papaya, Rockmelon/cantaloupe, Strawberries, Tangelo.

Vegetables: Artichokes, Asparagus, Beetroot, Broccoli, Cucumber, Chillies, Chinese greens, Gai lan (Chinese broccoli), Garlic, Green beans, Hass avocados, Kaffir lime leaves, Lettuce, Mushrooms, Onions, Peas, Potatoes, Silverbeet, Spinach, Spring onions/green shallots, Zucchini.

Rainbow Salad from Wholefood Simply

Quinoa Fritters

This is a great recipe if you have extra quinoa you want to use up as it is a perfect revamp (transform your leftovers into an exciting sequel!).  It is worth trying this one as it uses a lot of Spring Onions too

Zucchini Pasta with Lemon, Mint and Feta

While this recipe uses pasta you could easily do away with it as there are four zucchini’s in it! Just grate the zucchini lengthwise so you have long zucchini strands and viola – you have delicious ‘pasta’!  Best way to increase your intake of nutrient dense foods!

Dry potato and pea curry

This is such a super easy recipe – plus you can add any other vegetables you want with it to pack the nutrients in.  If you ate chickpeas they would be a great addition!

Green Salad with Tahini dressing

This is an amazing salad – packed full of seriously good greens – kale, plus avocado and chickpeas.  The dressing has gorgeous lemon and tahini in it too!
