What’s for Dinner: Five Ways with Fish

Even though fish is super healthy I often get stuck cooking fish in a few basic ways.  I thought I’d share a few ideas that I’ve found because I am willing to bet these few will add to your repertoire too.  Here they are – with favourite at the top of the list!

1) Crispy Salmon (Jamie Oliver’s 30 minute meals)

My all time favourite way to cook fish is this one from Jamie Oliver.  Seriously it works if you have skin on, skin off and any type of fish.  This way of cooking my fish has lead me to do many a fish dish variation!

2) Simple Greek Style Baked Fish

What I love about this recipe is that it adds in some extra flavour and a built in sauce with the cherry tomatoes, plus warm olives – which are delicious!  Use any firm fish for this one.

3) Baked Fish Fingers

If you want to do your own fish fingers this one from The Organised Housewife is a must try!

I like just plain baked brown rice crumbs – or almond meal vs many of the store bought bread crumbs (the ingredients list can be concerning).

4) Spicy Moroccan Stewed Fish (Jamie’s Ministry of Food Inspired)

This recipe was inspired by Jamie Oliver’s Spciy Moroccan Stewed Fish with Cous Cous recipe that you can find in the Ministry of Food Cook book.  I kept the same flavours, but didn’t add prawns or use cous cous.  I liked it because it was so easy.   Basically the way I cooked it was as follows:

In a pan heat oil, cook garlic, chilli, basil leaves, cumin seeds (1 teaspoon), ground cinnamon (1/2 teaspoon).

Add can of chopped tomatoes and the fish, cover and bring to the boil.  Add vegetables stir and cook for about 8 minutes – or until fish is cooked.

Jamie uses green beans and peas but you could add capsicum and spinach too – as I did).  

I’m keen to experiment with this one again by not putting in the can of tomatoes so it is more of a dry fish dish!

5) Indian Spiced Fish

This recipe just sees you coating fish in the spices and pan frying the fillets.  I’ve cooked this one in the oven and it turns out perfectly too.

That Moroccan Stewed Fish with Cous Cous has my mouth watering! I gotta try that!

I love these meal planning sites, they’re such a life-saver for a working mom. I use simplysmartdinnerplans.com (similar to emeals, but free) too, and am on the diabetic-friendly menu. I think they have a GF menu too.

No more “drive-thru shame” for this mom!
