As we come to the end of the official Asparagus season (the Australian asparagus season is between September and March), I thought I’d do a quick round up of some easy recipes our Meal Planning Your Way facebook family shared.
Now I do have to acknowledge I was surprised to discover a divided response to asparagus! Some really hate this vegetable with a passion!! Who knew?
I sit in the “I like asparagus” camp so clearly this post is for those like me that LOVE asparagus and want to give it a last hoorah. These are just some of the great ideas we received that will appeal to the asparagus lovers out there:

- Creamy, cheesy asparagus chicken
- Steam asparagus lightly then wrap in prosciutto and lightly fry
- Asparagus and sugar snap pea salad:
- Boil the jog, cover the chopped asparagus and peas with boiling water for a few minutes, drain and combine with crumbled feta, pine nuts, olive oil and salt and pepper. It’s fabulous hot or cold.
- Asparagus and sramble eggs
- Salad made with: asparagus, baby spinach, pistachios, spanish onion, red capsicum, shaved parmesan, olive oil, red wine vinegar
- Ham and asparagus mornay
- To asparagus in a pan, add some mushroom, bacon, squash and onion then sautee with butter and garlic. Serve over some creamy mashed potatoes

- Chicken, mushroom & asparagus risotto.
- Blanch, then toss in a hot frypan with olive oil, salt & pepper & add to a poached egg on sourdough toast.
- Fry off a yummy grass fed steak, then cook the asparagus in the remaining steak juices.
- Steam asparagus, and smother in bearnaise sauce.
So there you go – yummy ideas for the asparagus lovers – they all sound yummy and easy!
