Christmas Menu: A Twist on Christmas Menu Mains

December 11, 2013

Are you in the middle of finalising your Christmas Menu? Me too – I never plan too far in advance!! (probably because I my Meal Planning Personality is an Intuitive!)

So, I thought I’d share some ideas that I’ve seen and really liked for a whole host of reasons – either because they looked great, BUT MAINLY because they used a few different ideas to challenge the conventional wisdom of tradition!

In this post I wanted to share a few ideas for mains.  I am always of the view our Christmas Menus are pretty heavy on the MEAT, so I’m sharing a few dishes that show 3 types of Meat and 2 Vegetarian options.

  • Christmasy Chicken, Cheese and Prosciutto Parcels
  • Baked Salmon with Salsa Verde
  • Slow Cooker Lamb Roast
  • Zucchini Slice
  • Asparagus Quiche

Non Traditional Christmas Menu Mains

Christmasy Chicken, Cheese and Prosciutto Parcels

Christmasy Chicken from Taste.com.au

I LOVE this one from Taste.com.au.  It is so gorgeous.  I love it because you can easily find these ingredients and it looks so pretty – just like a Christmas Present and stunning with the tomatoes providing a flavoursome sauce.  They add the thyme sprigs after so they look nice and green.

For this recipe I recommend cooking one breast fillet per person PLUS ONE extra for testing to see if it is cooked through!

Now there are a few changes I’d recommend to this one:

  •  I don’t know why you’d panfry then wrap – too hot to handle?!  I’d just simply assemble and wrap them the night before, and on the day I’d cook them in the oven.
  • I’d use nitrate/ nitrite free ham that you can get from the supermarket’s packaged cold cuts area, or from your organic store/ home delivery people.

Baked salmon with salsa verde

Baked salmon with salsa verde from Taste.com.au

This recipe is amazing!  I love it and hope you will too.  Buying a whole salmon is actually a LOT cheaper than buying fillets – when you get it from a reliable fish monger!

Now the only thing to check in the recipe is the brand of mustard that you use.  Be sure to check that it doesn’t have preservatives in it.

Slow Cooker Lamb Roast

As a professional organiser I am a big believer of if you have it – use it!  Otherwise it needs to go!  So that’s why I am so delighted to suggest using a slow cooker to make a lamb roast.  Or any roast for that matter!  Here’s a recipe that I like too – nice and easy and it is so delicious.  You just have to get your timings right though if you’re doing lunch on Christmas Day!!!

Zucchini Slice

In Australia at this time of year Zucchini’s are in season which means they are usually cheap as chips!

Asparagus Quiche

In Australia Asparagus is also in season at this time of year which means they are beautiful and delicious too!

What’s in Season?

Now, I would love to hear from you! In the comments below, tell me what’s your best NON traditional Christmas Menu Main Idea and share a link to the recipe.
