This is such a quick dish to prepare. Even though it takes a bit of time to cook, it is so easy because you just put it in the oven – check it once then walk away!!!!
Don’t forget to multi-task your meals and ROAST some vegetables for tomorrow night’s dinner!! You could roast vegetables to toss through pasta, put on a pizza, use in a lasagne, make a salad!! Heaps of options for you to make awesome revamps (click here for ideas)!
- BUTTER PUFF PASTRY 2 sheets (or home made pastry!)
- FROZEN SPINACH (defrosted) or ½-1 bunch fresh spinach, chopped
- GRATED CHEESE 125g
- FETA 250g, crumbled
- ONION 1, diced - or use shallots/ leeks, sliced
- EGGS 2-4 (depends on how many you have - this is a very forgiving recipe!)
- Put oven on at 230C
- Put pastry sheet onto bench to defrost (or make your pastry!)
- Grease pie dish with butter (add a little flour to stop puff pastry sticking).
- Put pastry into pie dish
- Mix spinach, grated cheese and crumble feta
- Put filling into pie
- Crack eggs in the bowl, beat lightly then pour over spinach. Add second sheet of pastry. Brush with leftover egg from bowl.
- Cook in a hot oven for 15 min at 230C (bottom heat if you can), then 150-160C for 30 min (fan force).
