Cherry Tomato and Feta Frittata

Ingredients
- 6 EGGS
- 2-3 tablespoons chopped fresh HERBS
- pinch SALT and PEPPER
- 125g FETA
- OLIVE OIL
- 4 GREEN SHALLOTS, sliced thickly (or 1 ONION, chopped)
- 1-2 cloves GARLIC, chopped
- 250g cherry tomatoes, halved
- Serve with Salad greens
Instructions
- In a bowl place eggs, herbs, salt, pepper and feta. Mix ingredients well to combine.
- Over a medium heat, add oil and cook shallots/ onion and clove of garlic in a 20cm fry pan. Cook until lightly golden (about 2 minutes).
- Preheat your oven grill.
- Stir in tomatoes then pour egg mixture into pan over the filling. Cook until set (5-8 minutes).
- Place pan under preheated grill until frittata is set and golden (about 1-2 minutes)
- Serve with a salad.
